Fenugreek sprouts are high in protein (23%) and mineral salts (Ca, Fe, Mg, K, Na, P, S). Due to their capacity to aid digestion they are eaten by themselves or together with other sprouts. They also take on a different flavour when grown in direct or indirect light. Soak a suitable amount of seeds in water overnight. The next day spread them on the sprouting trays considering that they will increase by at least 4 times in volume. Keep at room temperature and in good light conditions. Rinse the seeds 2-3 times daily until they are fully germinated (4-6 days). They are immediately ready for consimption or can be kept refrigerated for 1-2 weeks.
