An aromatic perennial herb with a minty / aniseed flavour. French tarragon is slightly tender but has a far superior flavour to the more hardy varieties. Tarragon is a great herb to use when cooking chicken. Our favourite way is to mix it with butter and apply under the chicken skin and roast to perfection. Delicious!
